I recommend you take a moment to have a look at this you tube video: Squirrels are plentiful in Missouri, and the hunting season is long, so there's lots of opportunity to enjoy something that's both delicious and versatile...like my squirrel country sausage! Remove all the squirrel meat from the bones and grind or chop using a food processor. The leg meat is full of tendons and doesn=t always grind easily, but will be fine-chopped with a food processor.
